WATERMELON - Tomato and watermelon soup, watermelon fillet steak, strawberry, basil, mint, feta, sesame and sun blushed tomato foccacia. (V)


SALMON - Charred smoked salmon, a variety or cucumber preparations, yoghurt sorbet, lime curry, radish.


ELDERFLOWER - Elderflower dressed salad, elderflower and lovage sorbet float, asparagus, kohlrabi, radish, baby carrots, summer herbs and flowers, carrot top hummus, poached egg, beetroot. (V)


PIGEON - Wirral shot wood pigeon salad, goats cheese, almond, beetroot, raspberry, black garlic, liquorice, ecuadorian chocolate.

GLOUSTER OLD SPOT PORK - Roasted pork belly, grilled pork loin in caraway and fennel seed, gooseberry relish, elderflower and pork consomme, leek vinaigrette, samphire, kohlrabi.


PINEAPPLE CHEESE ONION - Spiced roast pineapple, pineapple and mango chutney, pineapple lassi, lentil curry, pineapple hot sauce, kidney beans, slow roast red onion, aubergine, courgette, coconut, paneer cheese. (V)


DUCK PEACHES AND CREAM - Roast duck breast, prosciutto, caramelised peach, feta cream, pistachio granola, vanilla mash, sand carrots, wild asparagus, black garlic, cherry and beetroot jus.
